which is better for defense?

    in defensive mode, which would be better, an item with +defense, or + deflection and parry?

    +defense/deflection/parry all fall under the category of "contested" avoidance. This means that these skills are basically checked against your opponent's weapon skills/level. Against a lower-level mob, they're highly effective, but against an orange or red con mob they become next to useless. The avoidance skills you really want to look for are a higher protection value on your shield, +block chance, +extra riposte chance, and +extra parry chance.
    I don't think plate tanks can use +deflection at all, unless they've changed things recently.
    As for the person who said to go with the higher skill if you're choosing, that actually doesn't matter. Because of some math that you can go over in the thread someone already linked, you get a higher amount of actual avoidance from having a lot of one skill than you do having a little of two skills. If your stats say you have 100% parry and 0% defense, then you have 100% avoidance. If they say you have 50% parry and 50% defense, then you actually have 75% avoidance. Unfortunately, the +parry/defense/deflection skills work on a curve. If you have 100 parry and add +5 parry to that, it increases your avoidance by a higher percentage than if you have 500 parry and add +5 parry.
    So, the short answer is that it doesn't matter, and you will get pretty much exactly the same benefit from +defense as you will from +parry. The only difference between the two skills is that +parry can let you riposte.
