Ultimately, whatever you'll keep playing. That said, a tank/healer combo is hard to complain about as tanks are hard to find and a dedicated healer that knows your tanking style is hard to beat.
If you're interested in raiding on the PvP server, I'd recommend starting a thread on the forum for that server.
