Pets ignore delay, they use their own built in delay regardless of the weapon. Pets ignore DAMAGE if the weapon dmg is lower then their innate damage* (* may have been changed to ignore it too? I remember when they changed the delay thing people would give pets weighted axes and watch them eat the world. I know you can't hand them weapons like that anymore but I'm only 90% sure on this part now) The weapon you see with Backstab listed is a dagger, its listed there for rogues. Equipping a dagger won't grant the pet the ability to backstab if it doesn't have it already (LV51+ mage water pets, some necro pet? forget which one)
They basically ignore the dmg/dly completely, but benefit from holding (2) of them to give them the Dual Weild ability and any other stats the weapons provide. Procs will work so long as the pets are high enough level.
The only reason to summon weapons for pets at 50 is if you are grinding in the Hole/Efreeti and want Ward Summoned procs or if your enchanter wants his animation to dual wield. The other pets will automatically dual wield and their base dmg/delay is too high/low to benefit from them. By like level 14 mage pet base ratios are better than the best summoned weapon currently.
Pets ignore delay but will equip the weapon with the lower delay. Until PoP there is no point in using summoned weapons except Sword of Runes when fighting summoned creatures and for lower level pets to enable dual wield. As said before, a couple of gnoll whips will be way more useful (or Ykeshas, even better). Once in PoP era, Fist of Ixiblat will be the "best" summoned weapon because it procs at level 10.
